Cherry Tomato Ideas

Overwhelmed with Cherry Tomatoes?  I sure am!! I love having fresh veggies but sometimes it becomes a bit much!  Cherry tomatoes are very prolific.  The other day I made some bruschetta with a bunch of my tomatoes and I also froze some.  I found out that all you have to do to freeze them is wash and dry them and then place them on a cookie sheet and set them in the freezer for a bit until they are solid.  Once they are solid, throw them into a Ziploc bag and put them in the freezer 🙂   I did up a few bags with 10 or so tomatoes for a quick grab for a salad at night.   I also made a batch of bruschetta.  I just diced up a bunch of them, added some balsamic glaze, fresh garlic, salt and pepper, tossed it and put it in the refrigerator.  I love it on a piece of toast with some cream cheese and then sprinkle some parmesan or mozzarella cheese over it.  Sometimes I throw it in the broiler for a few minutes and sometimes I just eat it cold.  Another good idea is roasting them.  Just cut them in half, toss them in some olive oil with salt and pepper and I like a little garlic powder, roast them in the oven on a cookie sheet at 350 degrees for about 20 minutes.  I just make some angel hair pasta and pour the tomatoes and juice over it for a quick lunch.   Do you have some other ideas?  Please share!!!
