As a kid growing up, this was a once a week kind of meal. We were poor so this pot of food would last a couple of days and didn’t cost much to make. I am from New England and we call it “Goulash” but in many parts of the US, they call it American Chop Suey. Whatever you choose to call it, it is good!! It is one of those dishes that simply makes you feel at home. I love a piece of bread and butter with it and a glass of milk. Just thinking about it makes me feel good.
1/2 lb macaroni
1 1/2 lbs ground beef
1 large onion, diced 1 green pepper, diced
garlic salt and pepper to taste
2 (14.5 oz) cans whole stewed tomatoes, undrained
Some people add a little ketchup or tomato juice but I prefer to add a can of tomato sauce if needed.
Cook the macaroni according to package directions. Brown your beef, onion and pepper in the same pot you are going to cook your sauce in.. Drain and season with spices to taste. In a large bowl, mash tomatoes with potato masher and add to beef along with the tomato sauce. Drain macaroni and add to the beef mixture, stirring well. Taste and add any other seasonings you like. Some people like hot sauce or ketchup even. I prefer to keep mine simple.
